6 or 7 cups of flour
2 tsp of salty
2 1/2 cups luke warm water
2 packages dry yeast
Mix all ingredients in a large bowl
* add a little less flour then called for and add the rest if needed
Knead for ten minutes, until smooth
Pour 1/4 cup olive oil over dough, knead until no longer sticky, usually will take 3 to 5 minutes.
Cover dough with clean towel and allow to rise until double in size
Shape the dough how you want it and preheat over to 425 degrees
Brush top of bread with water, or beaten egg yolks
Bake for 10 minutes at 425, the for 30 minutes at 375, or until slightly browned.
If tapped on the bottom it should sound hollow when done.
Place on a rack to cool off.
Ideas: If you wish to spice things up or add a twist to this delicious bread...
Add just a little bit of finely chopped fresh chives to the dough.
Just before removing fromv the oven shred jalepeno chedder jack cheese on top.
