Ingredients:
Large Potatoes
Salsa
Corn
Sour Cream
Salt
Butter
Milk
Mexican Cheese
Olive oil
Steps:
1.
Wash the potatoes thoroughly
2.
Use a fork to stab a straight line
across the potatoes
3.
Lightly coat each potato with oil
4.
Bake on 375 until browning on the
outside.
5.
Cut in half on the dotted line made
by the fork
6.
Scoop out the inside of the potato
7.
Mix salsa, corn, salt, butter, and milk
in a bowl with insides of potatoes. (mash)
8.
Refill the potato skins and top with
Mexican cheese, bake 10 minutes
9.
Top with sour cream if desired
