3 pounds Potatoes
1/2 bunch celery
1.5 red onions
1/2 pound of bacon, crumbled
1 bunch fresh parsley, chopped
1 and 1/2 cup of Mayo
2 tablespoons white vinegar (or cider vinegar)
Salt and Pepper to taste
1 tablespoon granulated sugar
Steps:
- Cook unpeeled potatoes until tender, NOT mushy!
- Slice thinly, trying not to make the crumble
- Place 1 layer of potatoes in bowl and sprinkle with salt
- Top with a layer of bacon, onion, celery and then parsley (In that order)
- In a separate bowl mix mayonnaise, salt, pepper, vinegar, and sugar
- Spread a few tablespoons over the parsley layer
- Repeat steps 3-6 until you are out of ingredients
- Toss this salad very gently, trying not to break the potatoes
- Chill in fridge until served
