Ingredients:
2-3 large carrots sliced
2 Large potatoes Chopped
1 large onion chopped
1 to 2 lbs ground beef
2 teaspoons salt
1 teaspoon freshly ground pepper
1 quart tomato juice
Steps:
- Put celery, potatoes, carrots, ground beef, onion, salt and pepper in large pot
- add enough water to just cover the ingredients
- Add tomato juice
- Bring to boil, then reduce heat to simmer and cook 1 hour covered
- Stir occasionally to break up meat
- Skim off fat from the top off broth
- Season to taste
TIPS
** Pour over noodles for an extra boost, but remember pasta absorbs broth !
Add peas, mushrooms, or any other vegetable you think would be good
